The Plate Lunch as served by Honolulu Mark is a mixed plate metaphor for the way people, their stories and their food, come together on one plate to make Hawaii paradise. Honolulu Mark has returned home to his Hawaii roots but eats, shoots and leaves extend to my second home, Seattle.

Made in Hawaii: Cactus to open in Kailua
The Made in Hawaii Festival featured a bazaar of local small businesses that included cooking demos from local chefs. Chef John Memering who is soon to open Cactus in Kailua took the stage to extol the virtues of supporting local farmers and cooking with local produce. The chef then took the tradtional sofrito recipe of using tomatoes and instead used Maui pineapple to complement the slow roasted local Shinsato Farms pork pictured above. Memering has cooked with Alan Wong and recently at Kalapawai Cafe. Cactus will offer South American inspired dishes using local produce and meats.
