What I like about this soft tofu soup are the complex layers of greens that shine through the clear broth. Here at the Saigon Bistro inside Uwajimaya in the International District, this soup is full of scallions, cilantro, cabbage and fennel fronds that complement each other in a broth that not overly seasoned.
It's a madding crowd during lunch rush here, but later you'll find available one of the few stools at the tiny counter. You may even find yourself entertained as I was. While enjoying this bowl in the early evening, the owner was also at the counter, watching "Van Helsing" with Chinese subtitles. It was the tail end of the movie and then he switched to some Chinese soap opera.
