Barikoku Tonkotsu Ramen

The Yataimura Shirokiya ramen fest continues with pop-up shop Hakata Chouten from Fukuoka here for a few days more. Ramen shops from around Japan have been featuring their best bowls here in Honolulu.

The photo here is a bowl of barikoku tonkotsu ramen. It's a thick, rich broth of bold, smoky, roast pork and miso umami. This ramen is for those who like the charred bits of roast pork.
