I don't know what made me think of Natalie Portman's shaved head today. It's the height of the national political season, perhaps it was the excitement of watching the Denver Democratic convention? Anyway, the eggy in a basket here uses a hefty slice of whole grain bread and the egg fried in extra virgin olive oil. Simple. Delicious.
