If you roast it, they will come?

Coffee City poses on the Seattle Times the question Should coffeehouses roast their own beans?

On the instant poll at the end of the post, I voted "Only if they have the time and talent to do both." Roasting and serving good espresso both require time, talent and obession with coffee. You can't just phone it in, no matter how wireless this city is. In this city, where the next cafe is sometimes within shouting distance, get the equation of good coffee + expert baristas + good service right, or you just don't get it.
